Miso-Maple Dressing

This is a great dressing for winter as it has enough oomph and body to stand up to the hearty last crops of kale or to cabbage-based salads. As is often the case, this is a recipe that is really just a jumping-off point for figuring out a dressing that you love and will use every day of winter! So here we go: start with a 1/4 c of oil, we love both olive and walnut, and mix in 1/8 c of maple syrup. Add a generous tablespoon of miso - for our most recent batch we used a sweet white miso (made, of course, in Vermont) but you can try any miso you like. Stir well and then add a generous slosh of apple cider vinegar. If you like a thinner vinaigrette with some body to it, stop here. But if you are looking for a thicker version try adding a tablespoon of plain yogurt and mixing well.

Not sure what to put this dressing on? We love a hearty kale, cabbage, and apple salad with the thicker yogurt and miso-based dressing. Or try root vegetables and citrus, we used roasted beets and oranges with the thinner vinaigrette and loved that combo.
