Oatmeal-Molasses Cookies

Oatmeal cookies are great. Molasses cookies are great. Oatmeal and molasses cookies, sweetened with maple syrup and molasses, are even greater.

Blend one egg with 1/4 c molasses and 1/4 c maple syrup. Melt 1/2 c butter (1 stick) and add to the mixture. In a separate bowl, combine 2/3 c white flour, 2/3 c whole wheat flour, and 2/3 c oatmeal with 1/4 tsp baking powder, 1/2 tsp baking soda, 2 tsp cinnamon, 2 tsp ginger, 2 tsp cocoa, and a dash of salt. Add the dry ingredients to the wet ingredients in two or three stages, blending well in between each addition. Last, stir in 1/2 c of dried cranberries and 1/2 c of chopped, toasted walnuts.

The dough benefits from chilling a bit, so you can put the dough in the fridge and preheat the oven to 375. Once hot, drop spoonfuls onto a cookie sheet and bake for 8 minutes then check for doneness. The cookie should still be a bit soft in the center but done on the edges. Once done, remove to a cooling rack and enjoy as soon as possible!
