Peach Salsa with a Touch of Maple

There are probably only a couple more weeks left of fresh peaches from the region, so this is a great opportunity to try something fun. Peach salsa with a touch of maple syrup goes so well with goat cheese and crackers that we wish we'd tried this years ago!

You can start off with a small dice of peaches or large chunks, but if the peaches are really ripe or if you are making this up a day in advance, large chunks will work better. 

For two peaches, try adding a fine dice of half a red onion, a fine dice of hot pepper if you like it spicy (try half a jalepeno and go from there), 2 T of white wine vinegar, 1 T of maple syrup, a dash of oil and salt, and then taste and adjust. Garnish with plenty of fresh herbs -- cilantro, basil, and parsley are all lovely. Enjoy!
